Vegetable pizza {Summer recipes mini-series}

Summer recipes

So many of you commented on my fruit pizza recipe last week that you would love to see some more recipes.  So here we go – a mini-series that will run for the months of June and July here at The Frugal Homemaker.  So look for a new post each Monday consisting of recipes perfect for summer!

Veggie pizza

So last week I shared a recipe for fruit pizza and this week let’s switch things up a bit and make VEGGIE  pizza! Smile  I know what some of you are thinking, but I promise this is yummy!  (And it is a cold recipe, perfect to make ahead of time, store in the fridge, and pull out for a party.)

Here’s what you need:

  • Roll of crescent rolls
  • 1 block of cream cheese
  • 1 package of dry ranch seasoning mix
  • 1 cup of cheese
  • various veggies of your choice.  My favorite are carrots, broccoli, tomatoes, green peppers, but you could also do cauliflower, cucumbers, onions, etc.

Roll out the crescent rolls pressing the seems together to form a crust.

Bake according to directions on can.  Let cool.

Mix cream cheese and ranch seasoning together with mixer.  Spread on cooled crescent roll crust.

Chop veggies and add them your pizza.

Top with cheese and you are done!

I don’t have a square platter, so I cut it in squares to place on a round platter to serve it.

If you like raw veggies dipped in ranch dressing, this is like the dressed up party edition! Smile

The chewiness of the crescent roll crust with the cream cheese ranch mixture topped with fresh veggies and cheese is divine!

Vegetable pizza

Ingredients
  • Roll of crescent rolls
  • 1 block of cream cheese
  • 1 package of dry ranch seasoning mix
  • 1 cup of cheese
  • various veggies of your choice (My favorite are carrots, broccoli, tomatoes, green peppers, but you could also do cauliflower, cucumbers, onions, etc.)
Instructions
  1. Roll out crescent roll on baking sheet, press seams together to form solid rectangle, and bake according to directions on can. Let cool.
  2. Mix cream cheese and ranch seasoning together with mixer. Spread onto cooled crust.
  3. Cut, peel, chop veggies.
  4. Layer veggies on top of cream cheese mixture. Top with grated cheese.
  5. Refrigerate until ready to serve.
